Zwilling Henckels 8 inch chef's knife. Never used but is over 30 years old. Great quality knive, I just have never used it. The other 2 are Japanese knifes I rescued from an old farm house in southern Japan and reconditioned. The wide one is called a Deba and is used for fish and bones. The other is an old-style sushi knife. You can find handles for them online.
